Chicken Enchiladas
It’s been probably about a week since I was looking for enchilada recipes online, and then got all the ingredients. I’m finally going to get around to making those enchiladas tonight. Well, maybe I am… I forgot to take the chicken out of the freezer so I’ll be making them if I feel like waiting that long.
I suppose I could abandon the chicken enchiladas I was planning on making, and make the ones in the recipe I linked above. They look really good and would probably be much faster to make. Of course, I don’t have all the ingredients for that enchilada casserole, so that would require a trip to the grocery store before I could make them. Maybe I’ll order pizza…
